Yup. The Chi-Mex take out got big when there were too many Chinese take out joints, and Mexican food became more popular. Taco King on 108 and 64th is an example. You should try it when you're in that neighborhood again. That place is very popular.

EXACTLY, that's exactly what I am trying to say too....there's plenty of bad "NY Pizza" in NY too. ESPECIALLY outside the city like on Long Island. You have trouble finding good pizza in NYC itself, and on LI, forget about outside the area.

There are really only a handful of places that make good deep-dish pizza, and almost all of them that aren't Pizzeria Uno were started by people who used to work at Pizzeria Uno.

I like Pizza Uno, does that mean I "experienced" "Chicago Pizza"??? :)

In seriousness though, I do like Chicago UNO (the chain), but I don't for a minute think that it's remotely comparable to real Chicago pizza, just because it's deep dish, just like Sabarro, etc isn't "NY Pizza", even if it was started in NY. People eat stuff like Sabarro, or "NY Style" pizza, and then "that" is real NY pizza.

I was using those cities as examples because they're rust belt cities where the culture is similar to Chicago and there are probably a fair number ex-Chicagoans around. The only online reviews I read by Chicagoans were some other random non-Yelp sites, and they specifically cited things that were wrong with the food itself (fake cheese, still-frozen toppings) and not authenticity problems.

That's one of the things wrong with "NY Style" pizza outside NY, and sometimes right in NY's metro area itself...ingredients mean a lot. One of the biggest things that are wrong is the cheese is wrong. The sauce has a lot to do with it, and the crust also. There is some really bad crust out there.

There's a Chinese Tex Mex place on Cypress and Putnam in Ridgewood I have gone to a few times, and really....it's quite good, at least for "NY" Tex Mex. It's so funny though, as you walk in knowing you are going to buy Mexican food, but the whole place is Chinese...and it looks like any typical Chinese take out place......those tacky signs above the counter with the pictures of the food with what it is underneath, the counter...the food preparation area also likes like the typical Chinese set up. Just looking at the place, you would think you could order Roast Pork Lo Mein.....
The menus are also like your typical Chinese menus.

I never tried Taco King on 108th, I will have to keep that in mind.

I don't think that they have the right suppliers for the ingredients ouside the Tri-State area. That can also explain why "NY Pizza" doesn't taste right outside of NY even when it's a NY-area expat running the place.
When I go to a so-called "NY Pizza" place in the rest of the country, the first thing I look for (before ordering) is the garlic powder. If they don't have it, it's a fraud and I leave.

You have something here, and I agree that COULD be the problem, and the key to why the pizza tastes different outside of the NY area. As I said, sometimes you have trouble even on Long Island, and sometimes even within NYC itself.
The biggest thing wrong with pizza outside of the NY metro area is the "cheese". You can tell right away when it has the wrong cheese, and that's one of the biggest problems. It even looks different, you can tell right away when the cheese is wrong, but sometimes it's the sauce and crust that is wrong too. This could explain why even though someone "came from NY", and makes pizza in "Santa Ana", it doesn't taste the same, as they probably can't get the same ingredients. That also could explain "bad" NYC pizza parlors, as well as some Long Island, etc pizza places that have inferior pizza.... some of them may get their ingredients from different suppliers too.
I think you are on to something with this "wrong ingredients" thing for part of the answer to this phenomenon that Easy doesn't understand.

I've just realized something that had been on my mind since coming to SubChat and virtually meeting the railfan community.
Being a railfan and a foodie go together! I don't know if one sparks the other. I think one reinforces the other as in:

1. If you are railfanning you are gonna go to many places outside your regular haunts and discover and try different restaurants/food joints.

2. if you are a foodie, you are gonna take the subway a lot and use lines that you usually don't and become curious about the system.

I was always both so one reinforced the other.
When I lived elsewhere, I would just drive to a food place (and often still have to) but in a place with a great subway system, it becomes an excuse to look foward to do both.

Some have speculated that it's the water. NYC water is unique. LI and some parts of Queens use a different water system.
As with suppliers, some places only use the top suppliers and only they know who they are. It may cost them more (and hence charge more for pizza) but it's worth it. Those top suppliers are probably unavailable outside NYC or would cost an arm and a leg if ordered from too far outside the city.

Agreed. And since "NY Pizza" is not as omnipresent ouside NY, it probably wouldn't make sense for these top suppliers to expand their businesses outside of NY because the demand is not there.
The NY-expat with the joint in Santa Ana is left with the same supplier options as other pizza places.

Real cheese and fresh vegetables can be found pretty much anywhere in the U.S. It may be more of a question of volume of sales - if you're constantly selling slices around the clock, you're more likely to use up fresh ingredients before they spoil.

It's more so "NY Metro" pizza, not "NYC pizza". You can get good pizza in the NY metro areas of Connecticut, New Jersey, and yes Long Island. Perhaps just less so than in the city itself.

The thing is, "pizza by the slice" is a very "NY" thing. Some areas don't even offer pizza by the slice, which is something NYers can't understand.
Actually, many of the "chain" places that open in NY don't offer that either. About a year ago, a "Papa Johns" opened in my area, and I wanted to try it....and was sort of taken back when I couldn't order a slice or two for lunch.... Outside NY that is quite typical.
I don't think Dominos or Pizza Hut do either.
The only time I ever had Pizza Hut though is when I am in other US cities...so I can't comment on NY Pizza Huts, as rare a breed as they are.

True. Even in Chicago, pizza by the slice is rare (and unheard of for deep-dish pizza), and it usually sits in a warmer all day because no one orders it.

It's the water in NY that makes the pizza taste better. At least that's what they say. This mentioned in court in the Donnie Brasco/Bonanno Crime Family trials.

The plan was to fill tank trucks with water from NYC, drive them to Tampa, and use the water for Sonny Black's Pizzeria.

Not sure about the reservoir, treatment plants, or piping.

It's not just the pizza, but Italian bread too, that NY water is said to help give them their uniqueness.

It is funny that people have transported water from NY to their locations in an attempt to make a better pizza.

Water is used to make the dough for the crust. Water may also be used in the processing of the cheese too, if it's from NY suppliers.
That said, I think it's more a matter of suppliers and ingredients, rather than the water itself, but I guess anything is possible.

No. I've never had pizza in LA that calls itself NY style unless you mean Domino's or Pizza Hut. And if that's what you mean, then I have no idea if they are different or not because I never had those in NY.

What I did mean was that water is not a reasonable reason for why the pizzas might taste different.

All water is the same. It's not the water, it's what's in the water which stays behind.

I'm not saying that it is the water, but that could be the explanation if it were.

Especially true for bagels ... Bruegger's of Vermont before they went national used to actually truck in NYC water from Ulster county in order to have their bagels come out just right. They don't do that any longer and their bagels aren't the same ...

Obviously that's what would have to happen, but we're talking differences of micrograms per slice. There are so many hundreds of other factors that would be more significant than water that it's absurd. Especially as I am trying to point out that these differences of micrograms are going to vary greatly in NYC water from location to location and even day to day.

I've never had pizza in LA that calls itself NY style unless you mean Domino's or Pizza Hut. And if that's what you mean, then I have no idea if they are different or not because I never had those in NY.

Dominos and Pizza Hut aren't even "NY Style" ANYWHERE in NYC, or NY area, much less anywhere else. It doesn't matter if "Pizza Hut" or "Dominos" are different inside or outside NY, as it's not "NY Pizza" even IN NY.
I have had Dominos and Pizza Hut both inside NY (rarely) and a lot of times outside of NY, and much like McDonalds tastes basically the same everywhere, so does "Pizza Hut" and Dominos. They taste the same in Queens as it does in Miami, Florida, as it tastes in Los Angeles California. But those aren't "NY pizza" anyway, so.....

What I did mean was that water is not a reasonable reason for why the pizzas might taste different.


I would tend to agree, and have mentioned that. Personally, I think it has more to do with the suppliers of the ingredients, and what ingredients are used.

Ahh, okay, yes, I see that now. I saw that Margherita brick oven style pizza photo there and thought they were trying to say that is what "NY Pizza" looked like. I didn't see the slice photo at the bottom.

By the way, the slice photo certainly looks correct. The cheese looks perfect for NY pizza, it's not "white".

NYC's water is "different". Regardless of what you are trying to say, water can be different in different locations. I have never tasted water like NYC has anywhere else, it IS no doubt different. And even Long Island water is different.
You never noticed that water is different in different places? You have traveled, I find that hard to believe that you never noticed water is different. NYC water is different than Long Island water, which is different than upstate water, and so forth. Florida and New Orleans has perhaps the worst tasting water I have had in the country. Las Vegas' is also pretty bad. I like Los Angeles' water, and also San Diego's. San Fran's is "okay" too. I don't remember Chicago's too much to comment, nor some of the other midwest places I have been.
But they are ALL different from eachother, and they are certainly different than NYC's.

And there is different things in water in various locations, so it's not totally out of the question that that could have something to do with it, as far fetched as it sounds.

There really probably is something to this. Easy can't grasp for some reason that water is different everywhere you go.
NYC water has a lot of air in it too. I was used to it, but you have to "run" the water a little bit before you pour a class of water, as otherwise it will appear "white" in a clear glass. I remember when people from Nassau or Suffolk would come to visit me in Queens, and they always commented on the "white" water. And I would say, "You just have to run it a little, and it will be clear. And it's not because there was white "debris" in the water, it's perfectly clear clean water, but the air in it gives it the white look when it first comes out of the faucet.
I miss NYC water actually....water on Long Island isn't quite as "good".

You have said you have had pizza in LA that supposedly is like NY's pizza (regardless if they happen to call it that or not). I find it hard to believe that any of the pizza you have had there tastes like good "NY pizza". It's not even easy to find "good" NY pizza on Long Island, much less outside the NY area. There's even plenty of "bad" pizza even inside the 5 boroughs.

Of course they taste different, but that's water! We're talking about any chemicals left when the water is not there anymore! For example if you had a rug and poured 5 ml of water on it, let it dry, and then licked it you would find that it tasted like a rug. And it would taste the same whether you used NYC water, LA water, or Mexico City water.

And it is completely far fetched! What makes a pizza taste like a pizza? The dough, the cheese, the sauce, the toppings,...all of those are so much more significant than the water that it's ridiculous. How often they clean the oven is very likely more important than the water they use. What temperature they keep their refrigerator, how fresh the ingredients are, which sauce they use, oven temperature, on and on.
