You have something here, and I agree that COULD be the problem, and the key to why the pizza tastes different outside of the NY area. As I said, sometimes you have trouble even on Long Island, and sometimes even within NYC itself.The biggest thing wrong with pizza outside of the NY metro area is the "cheese". You can tell right away when it has the wrong cheese, and that's one of the biggest problems. It even looks different, you can tell right away when the cheese is wrong, but sometimes it's the sauce and crust that is wrong too. This could explain why even though someone "came from NY", and makes pizza in "Santa Ana", it doesn't taste the same, as they probably can't get the same ingredients. That also could explain "bad" NYC pizza parlors, as well as some Long Island, etc pizza places that have inferior pizza.... some of them may get their ingredients from different suppliers too. I think you are on to something with this "wrong ingredients" thing for part of the answer to this phenomenon that Easy doesn't understand. |
