You have something here, and I agree that COULD be the problem, and the key to why the pizza tastes different outside of the NY area. As I said, sometimes you have trouble even on Long Island, and sometimes even within NYC itself.

Some have speculated that it's the water. NYC water is unique. LI and some parts of Queens use a different water system.
As with suppliers, some places only use the top suppliers and only they know who they are. It may cost them more (and hence charge more for pizza) but it's worth it. Those top suppliers are probably unavailable outside NYC or would cost an arm and a leg if ordered from too far outside the city.


The biggest thing wrong with pizza outside of the NY metro area is the "cheese". You can tell right away when it has the wrong cheese, and that's one of the biggest problems. It even looks different, you can tell right away when the cheese is wrong,

I call it the "plastic cheese". People who've never been to NY look at me bewildered but those who know laugh in agreement.

I think you are on to something with this "wrong ingredients" thing for part of the answer to this phenomenon that Easy doesn't understand.

Agreed. And since "NY Pizza" is not as omnipresent ouside NY, it probably wouldn't make sense for these top suppliers to expand their businesses outside of NY because the demand is not there.
The NY-expat with the joint in Santa Ana is left with the same supplier options as other pizza places.
