Fat, carb, protein ratios make a difference. If someone if overweight on 2000 daily calories, you can change their macro ratios while keeping total calories the same, and they will lose weight. |

For example if I eat 60 grams of fat with just 15 of 60 from saturated fat, my T levels drop and I gain weight. If I increase saturated to 25 and lower mono and polyunsaturated I lose weight even though total fat is 60 grams. |

You just hit the nail on the head.And the reason why some gourmet, "upscale", "foodie" butcher shops sell chicken fat, or schmaltz, is to cater to a population of people who focus on animal fat, and avoid the "industrial seed oils" aka vegetable oil. The Meat Hook in Greenpoint is an example of such a butcher shop. They always have schmaltz. So does Foster Sundry. They aren't kosher or in Jewish neighborhoods. But their clientele demands animal fats. Leaf lard. Tallow. Schmaltz. I might post a List of Jewish subchatters who don't know where to find schmaltz. |

You're right.Vegetable oils have largely replaced animal fats. This is the argument made in the Israeli Paradox. I've gone in to kosher butcher shops and supermarkets and no one carries schmaltz. I did find one kosher supermarket on the Upper West Side who lists it on the menu. But for the most part it's hard to find. One of the reasons is all humans regardless of ethnicity or religion, are eating more vegetable oils than animal fat than previous generations. The schmaltz is one reason why chicken soup is medicinal. List of Jewish subchatters who don't give a fuck if I think schmaltz is healthy will be posted before sabbath. |

Every expert and doctor is advising lower saturated fats.Schmaltz actually doesn't have a lot of saturated fat anyway. Olive oil was always seasonal. It would go rancid. It still is harvested in November in the Mediterranean region. Years ago, it had to be used by around April or May to avoid rancidity. This is why the Catholic Church created Lent rules that encourages using up all the Olive Oil in April. Anyway, you're right about availability. I've seen kosher cooking oils under the name brank Gefen. |
