You just hit the nail on the head.

And the reason why some gourmet, "upscale", "foodie" butcher shops sell chicken fat, or schmaltz, is to cater to a population of people who focus on animal fat, and avoid the "industrial seed oils" aka vegetable oil.

The Meat Hook in Greenpoint is an example of such a butcher shop. They always have schmaltz. So does Foster Sundry. They aren't kosher or in Jewish neighborhoods.

But their clientele demands animal fats. Leaf lard. Tallow. Schmaltz.

I might post a List of Jewish subchatters who don't know where to find schmaltz.
