What's your favorite deli meat? Even if you're not on the List, I'd like to know.

Applegate is good but expensive.

Could be honey turkey, could be pastrami, could be corned beef . . . just depends on the day.

Have not yet tried beef tongue, but the first place I see that has it, I will. Looks scary in the deli case, either way.

Have not yet tried beef tongue, but the first place I see that has it, I will. Looks scary in the deli case, either way.

Jewish dietary law prohibits mixing milk with meat.

Jews can't soak liver in milk like Christian do, to greatly reduce the harshness, so they had to go heavy on onions.

You're probably gonna be disappointed… it's Boars Head London Broil roast beef. Extremely lean and minimally processed. Great for sandwiches or salads.

For charcuterie, that stuff's available locally made. Or a run up to Oscars. Still reasonably local. Know where your food is from.

I don't ever recall anyone I know soaking any kind of liver being soaked in milk before cooking.

I thought the onions were for the flavor.

As a general rule, I stay away from threads involving food, baking and cooking in particular. For the "Old Guard", you may well recall the disaster and attendant public ridicule and humiliation I endured back perhaps a dozen years ago when I attempted a couple recipes. One was a pie, the other something called Heavenly Sent Brownies. In both cases, I went to the grocery store and picked up all the necessary ingredients or so I thought. I did not pick up Davis baking powder for the pie because I thought I had it but when I got home I saw it was baking powder. I decided to just substitute it because it looked the same and the rest was sordid history let's leave it at that. I can only assume it was the baking soda that led to the outcome. After a couple three months, time I needed to come to grips with that disaster, I found the recipe for the brownies. I went ahead and used all the ingredients but then my confidence nay cockiness got in the way. I changed the amount of ingredients by doubling everything because I wanted to make twice as many brownies never realizing that is not a quote linear proposition close quote. Moreover, I used to watch my little sister bake and she would sometimes add ingredients or substitute some based solely on her intuition and experience and it always came out heavenly so I decided to do it. If the pie was a disaster than the brownies turned out to be a catastrophe the likes of which I cannot even begin to understand. It was, in a word, cataclysmic.

Anyway, I remember getting absolutely crucified by many on this board. The unwarranted personal and ad hominem attacks on my person and character left me emotionally scarred and is something I am still working through. I knew I messed up so the comments ("What is wrong with you?", "Are you really that stupid?", "Do you have any common sense at all". "Like, how old are you?") were not necessary nor appreciated. There were three people, and only three people, who came to my defense. One was SMAZ, one was either JayZeeBMT or the Kew Gardens Teleport can't remember, and one was bingbong.

Ironically, after reading some from my New Cambridge Shakespeare edition of Othello and before lifting the lid on my MacBook Air (M4) a couple hours ago, I made myself an afternoon snack of crackers and smoked gouda, an apple, a piece of dark chocolate, and a dram of Balvenie Doublewood. Ring a bell? I was just getting into whisky and heard of that scotch when you mentioned it in that pie or brownie thread, at least I think it was one of those. Why I remember that I have no idea but since then I always have a bottle of Balvenie Doublewood in the cabinet. Smooth.

👍I remember that, and if you want to try again, start here. This is virtually foolproof.

Get yourself a package of Ghirardelli Chocolate Supreme brownie mix. Do NOT get the ones with chips or nuts. This may not work with those (I haven’t bought those in years because of the overall jaw problems anyways)! GENEROUSLY grease your pan (I prefer old timey Pyrex borosilicate)with butter. Do not spray lightly with PAMoils. This will prevent sticking when you go to slice and remove from pan. Make the brownies according to the recipe on the box. Put the batter in the pan. Before you put it in the oven to bake, grab your Nutella*, which should be at room temperature, and plop as many tablespoonish blobs as you wish on top. With the spoon handle, a small butter knife, or a popsicle stick swirl the nutella blobs in as if it’s a marble cake. Little mixing, not so much. Bake as normal. Cool and enjoy. Then drink your Doublewood and have a nice day.

*Bonne Maman chocolate with hazelnut spread works too. In fact, it’s what I used last time I made this….last week. Gotta eat what I can.

You're lucky enough to live in Upstate NY. Some excellent farming up there. A lot of Upstate farmers sell to food co-ops in NYC. It's a "local" as a big city can get.

There is nothing wrong with "seed oils". Just be sure they are cold or expeller expressed. Nothing to fear, no additives involved in the process.

This is a fun thread. I like most deli meats but the pretentious me only buys Boars Head 🐗.
The cracked pepper turkey comes to mind along with ham. Bing bong mentioned that Roast Beef. That’s excellent. Once in a while I’ll have pastrami. I don’t think I’ve had corned beef from the deli. And I cannot leave out the great redeeming qualities of a baloney and cheese with light mayo between games when on the field during a heat wave. It’s a life saver along with Gatorade.

Liebman's Deli in Riverdale has by far the best pastrami both myself and my wife ever had. It's fucking magical!

Soaking liver in milk is a well-known recipe.

But it's used less now because people don't eat as much liver.

When people ate more liver that soaked it in milk to reduce the iron and vitamin A content. You can overload on those if you eat liver too often.

My mom used to soak it in milk, then drizzle some flour on it. Then went the bacon strips, sliced onions & home fries as icing on the cake. Yummy. I was a weird kid. I loved it! All this cooked on an iron skillet over a gas stove with a pilot light. Back in the day calves liver was considered one of the best things you could eat, as with any other animal organ meat. But sometimes we'd get beef or pigs liver, whatever was on sale at the old Cracker Barrel.
But times have changed. Something about cholesterol issues took it out of favor.

When I used to eat such things, Boars Head was the most generic brand ever. Deitz and Watson very good.
Actually, I found a brand once, in Texas, called Brooklyn for Pastrami. That was the last state I've been to that had real deli counters in the supermarket.

It's a very well-known strategy. Milk absorbs a lot of the iron. Why is this good? Because when Europeans had to eat liver regularly, they suffered from iron overload. Milk soaking made it less toxic.

My mom used to soak it in milk, then drizzle some flour on it.

Then went the bacon strips, sliced onions & home fries as icing

on the cake. Yummy. I was a weird kid. I loved it! All this cooked

on an iron skillet over a gas stove with a pilot light.
Back in

the day calves' liver was considered one of the best things

you could eat, as with any other animal organ meat. But

sometimes we'd get beef or pigs liver, whatever was on sale at the old Cracker Barrel.

But times have changed. Something about cholesterol issues took it out

of favor.


We often had lambs' kidneys soaked overnight in vinegar and water then cubed and sauteed with onions and served over rice.

Filed in folder. In the event, I'll probably use Bonne Maman since, more than being non-GMO, it contains no palm oil, and besides, I love hazelnuts (chocolate covered and coffee). Thanks for recipe.

I am 5'11" and 190 but played anywhere from 182 to 188. As for aviation, as a male air hostess of color who happens to present as white, I am always serving food and drink to the customers passengers guests and so I am around food constantly which is why I stay away from food threads for fear of oversaturation... and yes, the emotional scarring and psychological trauma I suffered was awful, moreso due to the invective than the fact I messed up bad. Really just a sad outcome.

Been there and you'll get no argument from me. However comma I was still partial to Loeser's on W. 231st off Broadway for not only the pastrami sandwich but for Freddy who was the owner and worked the counter. An old-fashioned deli, an old-fashioned and great man. Fact.

Damn it. Immediately after posting, on a whim I looked up Freddy and saw he passed on last June at 88 years young. He was German-born and a Shoah survivor, something I never knew. Rest easy, my friend.
