My mom used to soak it in milk, then drizzle some flour on it. Then went the bacon strips, sliced onions & home fries as icing on the cake. Yummy. I was a weird kid. I loved it! All this cooked on an iron skillet over a gas stove with a pilot light. Back in the day calves liver was considered one of the best things you could eat, as with any other animal organ meat. But sometimes we'd get beef or pigs liver, whatever was on sale at the old Cracker Barrel.But times have changed. Something about cholesterol issues took it out of favor. |
