Most of the the "Gluten free" is consumer fraud as is "healthy whole wheat". We do not have 4 chamber stomachs, sufficient enzymes, saliva prodction , and micro-organsims to digest it.maybe I'd say most people who don't have Celiac disease, but give up gluten, report improvements in health. This study contradicts the gluten-free phenom. link I take in small amounts of gluten in a salad dressing I like. But I am pretty much bread and pasta free now. |
