Time heals and so it is I will be attempting to make a pie tomorrow. It is going to be an apple pie from Betty Crocker and I am going to try to make the crust crisscross like latticework. To better illustrate my point, here is a picture of Betty Crocker and thanks again.

In all honesty, the pie seems to have turned out pretty good. The only thing is the upper crust fell down in the middle even though I put in a lot of apples - I used the Cortland and Granny Smith varieties. Before choosing the Betty Crocker recipe, I researched apple pies and found it is alright to use tart apples because you put sugar on the apples anyway. I used about 1/2 the butter called for but other than that I adhered strictly to the recipe - I especially like the taste of the lemon and cinnamon. The last time I deviated from the recipe by substituting baking soda for flour which resulted in an unmitigated disaster of epic proportions which scarred me psychologically - it took all these many months for me to finally come to grips with that failure sufficiently enough to attempt another pie. I am now taking the pie with me to New Jersey to share it with my family. I made it for my Mom's birthday. Please monitor this thread periodically for updates and I will let you know either late tomorrow or more likely Monday if it was indeed a success. I know my family at the table will tell me it is good even if it is not but I can count on my little sister afterwards to tell me the truth whether or not I want to hear the answer.

Oh dear. There is a chemistry to baking though: you need a certain amount of fat and, for pastry, there is a relationship between the melting temperature of the fat, how much air you can get into the mix (my grandmother would always rub the fat and the flour together by hand, and said that it needed to stay cold) and the oven temperature. You want the pastry to cook and set before the apples, so that when the apple volume reduces, the top doesn’t sag.

I am back home still trying to sort through and make sense of the feedback from friends and family with respect to the pie. At this point, suffice that the comments were coming fast and furious and from every direction. I am still trying to comprehend this heretofore unprecedented situation and once I gather myself I will provide the details to the best of my ability. My Betty Crocker pie is no longer which in this case is a good thing. As mentioned in my post (141130Z APR 12) I took my little sister aside afterwards. She told me the pie was quote quite good unquote. I immediately picked up on her use of the term quite and called her on it. She then told me she meant it was "really good" which I accepted without escalating the issue. To her credit, she told me she prefers a little less sugar and a little more tartness but she still liked the pie. As for the others, everyone finished their piece of pie with either coffee or tea except for one individual who due to privacy issues and an abundance of caution I choose not to identify except that the individual in question was of the female persuasion. She happened to be sitting directly across from me and I noticed she barely took a bite and then began pushing it around with her fork for a considerable amount of time before stopping and then nudging the plate away with the piece of pie still on it as if she was full. It was clear to me that she was not full because I saw her eat a couple chocolate truffles with tea after her rude display. I was upset at first and about to call her on it but I did not want to get into an argument with her especially since it was my Mom's birthday. In the end, I realize everyone has a right to their own opinion no matter how wrong it is. In summary, I am pleased with the outcome of the pie and so ends this chapter of my life, and thanks again.

My brother in law Dave took pictures of the celebration so I will ask him to send a picture of my pie and then I will post it in this thread. In the meantime, my pie looked like this one except I went ahead and braided the lattice crust instead to make it look fancy in case nobody liked the taste of my pie. It turns out I was worried about nothing but at the same time I am a realist and as such I cannot in good conscious or whatever that word is tell you that all of a sudden I consider myself a good cook and baker. At least I made the effort, something I was unsure of after the catastrophe of last year.

Good. One very Yorkshire variant to try is to make the pie more tart: Granny Smith apples, less sugar, and make the pastry with lard rather than butter. Then serve with a slice of cheddar cheese.
