Easy Bake

Early this morning, after a lengthy self imposed hiatus from the kitchen, I attempted a recipe that was supposed to result in something called Lemon Sunshine cupcakes. I made a batch of 18 cupcakes. I do not know exactly what happened but suffice to say it turned out to be a horrible mistake and left me traumatized. I respectfully ask your patience as I am in no mood to share the particulars at this time. Please monitor this thread periodically for a detailed update once my mental faculties return to some semblance of normal, and thanks again.

It's ok. Once you clean up, air out the kitchen you'll feel better. Don't let the mistake get to you. I hope you don't have an insurance claim on this, but if it's the first time you may still have a chance to change your policy and lower your deductible before they notice.

Update #1:

My cupcakes did not work. With minor exceptions as outlined below I rigidly adhered to the recipe. I mixed the ingredients according to the recipe and poured the batter into little paper forms that fit into the pans each holding a dozen cupcakes. I put it into the oven and set the temperature and timer. The recipe stated after baking to take a toothpick and stick it into the cupcake to see if the cupcake was done. The cupcake stuck to the toothpick so I put the pan back in the oven for 5 minutes and then checked my cupcakes again with the toothpick but it was still wet so I put it back in for 5 more minutes and checked to make sure the tops did not burn. Now when I took them out the cupcakes were flat. I tried one and it tasted bad and the inside was heavy wet dough. At this point I decided to cut my losses and I threw the cupcakes out. The recipe called for one stick of butter and one large egg but I only used 1/2 stick of butter and no eggs to be healthier. The only other thing was that I used a hand whisk and spatula to fold the dough because I do not have the regular mixer. It is hopeless. It feels almost like a moral failing on my part. I don't know what's going on anymore.

Never fear butter and egg when baking. That's what they do best. The amount in a given cupcake is ot so great and besides, that's what cpcakes are for. Your technique with the wisk is excellent, after all cupcakes existed long before KitchenAids. Just don't be shy and follow the reipe. Egg is a binder, without it you get wet muck inside. Butter is an emollient, and is necessary for the structure to have a moisture balance.

Do you really thing the ingredients in a recipe are merely suggestions?

There are substitutions but unless you are an experienced cook or have looked up the substitutes, you should follow the recipe. At least, the first time you bake it so you'll know how it's supposed to taste.

I see your point. I am unsure what it was exactly I was thinking. As some here undoubtedly recall, I once substituted ingredients in a recipe - I did not have the right ones - in the tragedy that will forever be remembered as Heavenly Sent Brownies, an irony if there ever was one. This time around I omitted ingredients and the result was an utter humiliation and disaster. You live, you learn.

Don't feel bad. The one time in my life I tried baking was 1981. I was going to surprise my wife by baking a dessert. The recipe called for baking powder and all we had in the pantry was was baking soda; I figured "how different can it be?" I learned the hard way how different it could be!!

The cupcake was supposed to look like this one except without the little star on the icing. To the extent I learned from my previous failures in the kitchen I thought I was ready to attempt this recipe. Clearly, I was not. With respect to the culinary arts, I really have no idea what I am doing let's face it. This thread will close at 280400Z(UTC) OCT 14, and thanks again.
