Couldn't agree more on "real pizza," not that "Baker's Pride" crap. Over in New Scotland, we have a former chain restaurant that had wood fired pizza (and no, it doesn't smell or taste like bacon, the wood is used only to make heat) and is now owned by its former manager. They make quattro formage to DIE for ... needs nothing, not even salt.But back in the city, I'd douse mine with all the usual stuff - oregano, lots of garlic (since there wasn't any in the pie) and depending on the other toppings, I'd add some parmesan along with the peppers, salt, etc. But GOOD pizza doesn't need anything beyond what's on the pie. :) |
