When I get pie from the regular "pizza joint" I jazz it up with red pepper flakes, maybe a little thyme or garlic powder. When I go to one of those coal-fired oven places, then I add nothing. Those places usually use the good Italian sausage made with a noticeable amount of fennel. To me, the flavor is all there and no need for spicing.My favorite pizza is the white clam pie at Pepe's. These are freshly shucked clams that go on the pizza, not canned. Frank Pepe was reportedly allergic to tomato sauce so he developed a white pizza back in the late 20's. your pal, Fred |
