'Wikipedia describes [bubble and squeak] as a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner'In its modern manifestation, it is previously cooked potatoes and cabbage mixed together and then shallow-fried. It ends up tasting a little like hash browns with cabbage in. London cafes now usually call it just 'bubble'. As for kippers, well yes, they do make a smell in the house when you cook them. It's best either to get them in a restaurant if they are available - hotels sometimes have them as a breakfast option - or buy the 'boil-in-the-bag' sort which confines the cooking smell! |
