I think they use the words North and South to signify which direction the trains move in Manhattan. Example F train runs express southbound in Queens = Coney Island bound.

They can't use a destination (such as 34th-Hudson in place of the words North or South) since I don't believe there are currently thru-trains to 34th-Hudson Yds.
