From what I understand, when the Westchester Avenue branch was opened, the 2nd & 3rd Avenue Els provided the service for approximately a year until the subway tunnel under the Harlem River was completed.

That is correct. Second and Third Avenue trains provided all service on the West Farms Line from November 26, 1904 to July 10, 1905.
