Boston did that too through the mid-1800's. The original town on the Shawmut Peninsula was called "Trimonten" (sp?), or "three mountains" - that's why there are so many "Tremont" streets, etc. In the area. Two of the hills were completely leveled, and the third, Beacon Hill, lost about half its hight. The dirt was then used as fill to both create the current shoreline and the Back Bay neighborhood - which had previously been tidal flats.
