e original logic for leaving a cash tip was that people didn't trust the owner/manager of the business to distribute tips fairly.

Wouldn't the explanation of the system policing itself actually apply even sooner if the tips were not in cash? After all, the wait staff could keep a running tally of tips that were added to their bills over the course of the night and then total those amounts at the end of the night and compare to what management claimed the total tips were.



the problem is anyone who complains about the restaurant stealing the tip will get fired. this is more of an issue at higher end places.

Cash becomes this whole game theory of "should I put all my cash tips into the pot -- because I think Bob skims 10% every night".

i don't know of many places that have "pool". it's more of the waitstaff "tipping the other employees. besides it easier for a hostess to make life difficult for a waiter than it is for a a waiter to make life difficult for an owner.
