You just hold the weight instead of reps. The goal is to generate force.

For example, you do a squat by squatting down to a 45 degree angle and hold it for a minute. Lay down on a bench and hold a dumbbell in each hand palm facing upward and hold it for about 30 seconds. I've tried it and it does hit the muscle group and no pain in the shoulders or knees.
