Yes, mustard on pastrami is better than pastrami with mayo on white bread (Woody Allen, iinm).

Bologna, liverwurst, spiced ham, Taylor ham, etc. I can see mustard.

Chicken, turkey, rather use mayo.

Just my personal taste; de gustibus.
