Can I take some generic white fish, punch it out into rounds, and sell it as scallops? People do; but it's not a scallop.

Government regulators define "bacon" as coming from a pig. All you've got is cured beef belly (I haven't seen their futures on the option exchanges I follow).

My friend, take it up with the USDA. They set the definition, not me. As a rose is a rose is a rose, bacon is bacon is bacon. Rose does not equal tulip, and pig does not equal beef. It be similar, but it does not meet the government's definition of bacon; not do those "bacon bits" made out of God knows what that are not porcine either.


Beef frye isn't sold as bacon, it's sold as beef frye. All I'm saying is if you want a non-pig alternative to bacon, it beats turkey "bacon," which isn't bacon at all (yet is sold as "bacon").
