Except that Italian-American and African American aren't the same thing. "Italian" refers to a specific country while "African" refers to a continent. That means that "African" is mainly being used to denote racial heritage, not national origin. Similar to Chinese, Korean, Vietnamese, Japanese, etc. being grouped as Asian. The United States for a variety of reasons has a long history of categorizing it's citizens by race. Not so much by national origin.
