Schmaltz is very hard to find.Some kosher markets sell it, but most don't. No regular supermarkets sell schmaltz. A lot of the kosher markets in Queens don't carry it, apparently because a significant percentage of the Jewish population is Russian or Bukharian, and it's not their tradition. It's more of an Askenazi or "European Jewish" food. No one sells lamb fat. One interesting thing about kosher markets is the abundance of cottonseed and sunflower oil. They even have a kosher version under the name Geffen. |
