Europeans are more likely to have the mutation which allows them to keep producing lactase (the enzyme to break down lactose) into adulthood, because they've depended on dairy as a regular food source for a LONG time. Typically, children produce it to break down the lactose in mother's milk, but in theory shouldn't need it anymore once they're weaned. |
