The mustard adds a little extra vinegar kick
I bet if they lowered the amount of sugar in the ketchup they could just use ketchup.
You’re on the money with vinegar aiding digestion of rich fatty foods. We always had oil and vinegar coleslaw when we had fatty stuff like bratwurst or pulled pork.
