Pollsters can deal with non-responders. If 70% of responders say they are registered Democrats, but voter stats show that only 45% of voters are registered Democrats, the pollster will reduce the weight of the self-identified Democratic responders.

Similarly, with people who flat out lie, pollsters have a way of diluting their responses because their answers to the corroboration questions are weird.
