Why things are no longer like that is such a complicated subject and a subject where I'm far from an expert. But I do like to think that I assess things logically. What comes to mind is that the very of nature of jobs and what skills are valued by employers has changed drastically. People that have not prepared themselves for this type of workforce either academically or learning a valued skill or trade are going to struggle economically. It's no one's fault, but being a barista or even a teacher isn't going to make you wealthy and everyone that has entered those careers is aware.

Also, cities have become more desirable than maybe ever before. People with means want to live there. There are more people with money that want to live in places like NYC and San Francisco than ever before and they are squeezing out people with more limited means.

Lastly, these low paying jobs would pay more in cities if workers stopped figuring out ways to make them work by doing things like living in cramped conditions or commuting for long distances. It's hard to argue that employers should pay more when there are so many willing to work for less.
