I think more research needs to be done on Judaism before pork was banned. How long ago was pork banned in Judaism?

At least six thousand years ago, and it was not called "Judaism" due to not being exclusive to the tribe of Judah.

He didn't do that. Some Jews don't like the term because it was used by people who were seeking to convert Jews to Christianity (e.g. Alexander McCaul, an Irish-Protestant missionary to the Jews who worked in Jerusalem), but such people were not of the Charlemagne type who would force conversion under pain of death.

The Catholic Church still calls Sabbath worship "Judaizing" under canon law, BTW.
