Back in the day calves liver was considered one of the best things you could eat, as with any other animal organ meat. But sometimes we'd get beef or pigs liver, whatever was on sale at the old Cracker Barrel. But times have changed. Something about cholesterol issues took it out of favor. But it's used less now because people don't eat as much liver. When people ate more liver that soaked it in milk to reduce the iron and vitamin A content. You can overload on those if you eat liver too often.
